ZESPRI® Gold Kiwifruit and Cheese Pie

INGREDIENTS:

CRUST

175 g (1 1/2 cups) graham cracker crumbs

54 g (6 tbsp) brown sugar

1/4 tsp salt

1/8 tsp ground ginger

90 g (3/4 cup) toasted hazelnuts, chopped into fine pieces

zest of 1 lime

90 g (6 tbsp) unsalted butter, melted, plus more for lining mould

 

CHEESE FILLING

224 g cream cheese, room temperature

112 g goat cheese, room temperature

100 g (1/2 cup) sugar

zest of 1 lime

1/8 tsp salt

1/4 tsp vanilla powder

224 g crème fraiche, room temperature

118 g (1/2 cup) cold cream

5 ripe ZESPRI® GOLD Kiwifruit, peeled, cut into 1/4 in thick rounds

 

SHAVED KIWI ICE

6 ZESPRI® GOLD Kiwifruit

100 g (1/2 cup) sugar

juice of 1 lime

 

TO SERVE

mint leaves

 

METHOD:

CRUST

1. Preheat oven to 325°F.

2. In a bowl, toss together all ingredients.

3. Press crust into pie shell, about 1/4 inch thick and up the sides.

4. Brush pie crust lightly with butter.

5. Gently place in oven and bake for about 10 – 12 minutes.

6. Remove from oven and let cool completely.

7. Refrigerate while preparing the filling.

 

CHEESE FILLING

1. In an electric mixer, beat cream cheese, goat cheese, sugar, lime zest, salt, and vanilla powder until light and fluffy. In the meantime, whip cream till soft peaks.

2. Remove bowl from mixer and fold crème fraiche into cream cheese mixture, followed by the whipped cream. Fill pie into the prepared shell till almost the top, leaving about 1/4” or so. Refrigerate pie until the top of filling is set, about 40 minutes.

3. Arrange ZESPRI® GOLD Kiwifruit in concentric circles atop filling, overlapping slightly, and refrigerate until serving. If the pie is to be refrigerated for more than 4 hours, cover with plastic wrap directly on the ZESPRI® GOLD Kiwifruit.

 

SHAVED KIWI ICE

1. Bring sugar with 1/4 cup of water to heat until it is melted.

2. Transfer syrup to blender, add ZESPRI® GOLD Kiwifruit and lime juice, and blend until smooth. Pour mixture into a metal pan and freeze until hard. One hour before serving, scrape the ice with a fork, and freeze again until serving.

 

TO SERVE

Place tart in the middle of the bowl and surround the sides of the tart with Shaved Kiwi Ice. Garnish with a couple of torn mint leaves on the ice.
